Fat, oil is not healthy why do whole world use it for cooking?

There are many reasons to use oil or fat in cooking. First of all it tastes good, secondly, it increases shelf life of perishable foods, thirdly, it decreases cooking time. It is easier to cook any vegetable, anything using oil. Steam cooking which preserves healthy vitamins, minerals in the food is not an easy method for an average cook. With boiling method, during boiling potassium leaks out from food into boiling water, food looses its rich taste, vitamins  and minerals.
Microwave cooking solve such leaking problem, but microwave is not good to cook large scale of food, vegetables.
Barbequed food is good to eat immeditely. But many houses are not suitable for barbeque method.
Another factor is that daily allowance of fat, oil calories is higher for man, because their body in general is bigger and requires more total calorie. Man pay for many restaurants, their choice dictates the food market.
